crushed and fermented spontaneously with native yeasts and no temperature control in concrete tank

sulfur is used judiciously during racking but never at bottling

The nose is warm and beginning to show an attractive complexity characterized by understated red fruits and spice along with leather and tertiary notes

The wine is aged in large oak botti for up to a year and half and is bottled without fining or filtering or additional sulfur (minimal amounts are used at racking only)
